Gailey’s Breakfast Café: Award-Winning Breakfast, Nostalgic Atmosphere

How much more patriotic can you get with breakfast than the Freedom Waffle? That’s what I ordered the first time I dined at Gailey’s Breakfast Café in Springfield, Missouri. The thick Belgian waffle, topped with loads of sweet strawberries and blueberries and striped with whipped cream, was made to resemble the America flag. It was as delicious as it looks.

The food

Gailey’s Breakfast Café, open since 2005, has won numerous awards for its breakfast. I’m not surprised, based on the two times I dined at the café. On my second visit I ordered the French Quarter, which included two pieces of French toast, two scrambled eggs with ham and cheddar and sweet browns. Sweet browns are hash browns made with sweet potatoes and topped with a sprinkling of brown sugar.

On both visits, others in my party raved about their breakfasts, too. Their dishes included eggs Benedict, a Mediterranean omelet, and a lighter breakfast of oatmeal, fresh fruit and a scrambled egg.

The ambiance

Gailey’s Breakfast Café is located in the former Gailey’s Drugs in downtown Springfield, a mom-and-pop owned pharmacy. I love that they kept some of the drugstore’s signage on the outside of the building. They’ve also kept the original lunch counter. The diner extends into the former Hotel Seville, which opened in 1933 and operated for several decades.
